Officially opened on 21 December 2000, the restaurant was named I-ping partly because it is easy to remember and read and partly because it is “irreplaceable.” This also reflects the four main principles of I-Ping founder Qi-han Cai: One can eat it, see it, hear it and enjoy it.
The first two principles refer to the taste and fresh cooking style of the House Special Chicken; the last two principles denote the different kind of service from the wait staff.
From the time one enters the restaurant until he/she is led to the table, attendants explain in detail the history, background and cooking style of the House Special Chicken and the romantic story of the high-grade Shaoxing wine. This is what “one can hear it” implies. When the food is put on the table, waiters will cook the House Special Chicken for the guest by the table, including the chicken, rice noodles, tofu and fish dumplings. Professional waiters will prepare various courses for the gusts.

1 Ping chicken_Delicious chicken hot pot1 Ping 花雕雞 is a traditional chicken cuisine that's made from high-grade shaoxing wine, its saucy with strong flavor, goes deliciously with white rice. I also enjoy their pepper-ish clam soup. There are a few steps in dinning here, first you have the chicken as it is, secondly you can pick a few hot pot ingredients and have them cook in the chicken base, they will fry the ingredients for you. And Lastly they can make soup out of the original chicken cuisine by adding broth and vegetables. It's quite an interesting dinning experience and absolutely delicious.
