侯布雄法式餐厅 L’ATELIER de Joël Robuchon 凭着其紮实的法菜功底加上具新意的摆盘,在台北米其林指南中摘下一星,台北店也继全球17家餐厅共获 34 颗星後、 将成为侯布雄的第18家摘星餐厅, 全球共获得 35 颗星。 主菜之一的鸭肝鸡肉卷佐斯佩尔特小麦,是法国人经常在冬季来临时烹煮的菜色,选用来自台中、仅10到12周大的放养山鸡肉,肉质细嫩又富嚼劲。另外像是香酥鸭卷饼,做工繁复,选用 3.6 公斤的樱桃鸭以白胡椒、 八角、甘草等香料腌渍 8 小时,入蒸炉蒸熟,再炸至表皮酥脆,把鸭肉和葱丝、小黄瓜、甜面酱等以面皮包卷起来,入口饼皮Q香, 鸭皮酥香肉质嫩甜。陈皮糖醋排骨除了酸甜的酱汁,肉质紮实外,最重要的是陈皮香气迷人爽口。

    Amazing beyond 21st century fine dining

    Astonishing bar setting for fine dining with a personal space of a few inches from strangers sitting by you if full house with all seats filled. Conventional fine dining provide ample space between tables, hopefully you will find this comfortable when you dress up nicely for dining. Amazing fusion with the kitchen facing right in front of you using Japanese tapanyaki table for French food. The food did not showed anything superior to original cooking. And expecting French crusine while the sushi plate is nothing near the sushi eating at Japanese restaurant. French style Sushi, must try and compare. House champagne is VC yellow label which is much mandane to be expected in a fine dining restaurant, why not something like Billicart Salmon which is in the menu as customers are willing to pay $1000 hk for a lunch sitting at a bar table. Amazing menu but not quite outstanding from other fine dining restaurants. Only Australian beef provided on the day of visit. Wine list book is here, about one fifth the size of Robuchon in Macau. Derserts could be better, Americano coffee ,I do not appreciate much.

    ...with Robuchon. It's a bit busy and chaotic compared to other of his branches, but maybe also because I was sitting at the counter. Some amazing dishes, a few instead maybe to amend a little bit. But overall great great experience as usual. Very attentive use of anything that is added to your place. Bread could be improved and so the cheese choice. But probably in this part of the world they are not big fans of none of those. Great place. I'll go back!

    Fine dining!

    This restaurant is located on the top floor of an exclusive shopping center. The décor is all imperial black and red. The staff was friendly and helpful in a way. The food was absolutely delicious. We had a five-course menu and the food was adapted to one person gluten-free. With the food we requested wine-pairing but not all the pairing was a good match. As an example we were served a dry French Chardonnay with foie gras. The one thing which we found strange was that, there is no gluten-free bread available even though, the owner also has a bakery in the same complex. This is a restaurant that we would recommend and we would certainly go back.

    A Different Restaurant!

    We four went to L'atelier De Joel Robuchon for lunch. It happened that today was the last day of the Asia Annual Tour of the French Team. We had been to this restaurant several times, and honestly was not quite impressed - especially comparing with our Robuchon experiences in Tokyo, Hong Kong, and Macao. But today the food and the services are impeccable. We are not sure it was because the extra supervision and stimulation, or it was because of the new chef Florence Dalia. One thing we do know is that we are coming back!
