介紹

和知軍雄擅長以熟食轉換饕客因連道生食後疲乏的味蕾,幾乎全數自日本進口的魚鮮與食材,例如產自島根縣的米、德島蓮藕、以「一本釣」方式捕獲的鹿兒島鰹魚等,連製作高湯、米飯的水都特地選用與日本水質近似的礦泉水,都是和知軍雄強調時序與季節感、表現精準極致的日本風味手法之一。 奪星前即已處處要求完美的和知軍雄謙稱,獲星的肯定也是精進自己廚藝和餐飲品質的動力,壓力雖大,但求不負米其林一星的光榮, 讓饕客嘗得最純正的日式料理精神。

    台北最愛的Omakase

    這家絕對是我在台灣最愛的Omakase~ 所以來了很多次,午餐晚餐都來過~ 老闆很可愛,還會跟客人開玩笑,氣氛很好。盤子跟擺盤的東西也都有一直在換,很有心!無論是生食還是熟食都非常的好吃!

    謙安和的料理長是原在西華飯店鮨小馬負責的和知san。今年勇奪米其林一星,使得訂位變得更加不容易。今天的主人安排在樓下的包廂,有隱密性但也因此無法近距離看到大廚的手藝表演。 每樣海鮮料理不論是生魚片,燒烤的,油炸的,都很精緻可口。用的都是日本來的頂級食材,價位肯定是在高檔的。感謝主人的費心安排。

    Has one michelin star, only 1 set available at TWD5800. The food is great and service very good. Was about to give full marks until my partner wanted an extra dish. They offered another 4 slices of sashimi . It was an extra TWD2,200 and included (gasp) dolphin

    Am writing this as I am waiting for my next dish to appear...as the pace of the food is excruciating slow. More cooked food served than sushi/sashimi hence not sure why the delay...could be that there were another was a table of 10 at the basement on top of another 7 at the sushi bar. Food quality is fine but nothing impressive. For the sticker price, I will not be coming back again.

    Omakase Dinner

    A total of 13 course dinner (TWD 5800/set) Very well designed interior of the restaurant, was arranged to sit at bar table. However, the couple aside was speaking too loudly which quite ruin the atmosphere. Some tablewears were slightly flawed. Till the 10th dish, a hair was found within the vegetables. Even though the staffs apologise sincerely and redeem us with a little gift, it still does not make it acceptable as a Michelin-star restaurant. Terrible experience but I assume it was just unfortunate. Overall food quality is fine, staffs were nice and the food explanation part was much appreciated, but in my opinion it’s not worth the price and I’ll not recommend.
