Tucked into a side alley in east Taipei, this decades-old eatery is adorned with carved pictures, paintings and calligraphy created by "Grandpa Song," the owner. Mr. Song brought the recipes for his crowd-pleasing pickled vegetable and pork hot pots to Taiwan from his native Heilongjiang in northeast China. The hot pots are made in a strict traditional style with carefully selected cabbage from Yantai and streaky pork. The soup stock is made from skinned chicken, mushrooms and carrots stewed for four hours. The soup combines a perfect sourness with a fresh sweetness. There are also 12 lovingly made dipping sauces to choose from.
